Feeling confident that I might be able to add value to you the reader, I sat down to write this article on cheese and wine pairing. Having now thrown several drafts on the floor and into the fire, I have come to the conclusion that there is truly no set method for doing so. What I originally set out to learn has taught me something much more valuable, that cheese and wine pairing is simply suggestion, which is as diverse as taste.
Nothing demonstrates my point better than the ancient Greeks. For centuries the Greeks enjoyed grating their cheese directly into their wine. In all of my research I have not found anywhere that this is a proper way to pair wine and cheese, BUT before we judge them too harshly, let’s examine ourselves. Do we not from time to time dunk our donuts in our coffee? I think so, so let us go forth and judge no more.
But because cheese and wine have been married now for centuries; as wine enthusiasts it behooves us to learn a little something about our friend’s spouse. Now while we could break down individual varieties of cheese and their correlating aspects, it still wouldn’t answer the question of what cheese pairs best with a particular type of wine. This truly can only be answered by the individual taste.
So let us pair multiple cheese varieties with the wines we like while attempting to adhere to the old rule of thumb -- that hard cheeses are favored with red wines while soft cheeses are favored with white wines, and the saltier the cheese the sweeter the wine.
Let us go forth, experiment and enjoy the good things in our lives.
